Machi-chuka (Japanese-Chinese diner food)

町中華

29 varieties

Machi-chuka names the dishes that started from Chinese cooking and were reshaped, one by one, to suit a bowl of white rice at Japan's neighborhood diners. Cornstarch-thickened sweet-and-sour sauces, soy-based glazes, and vinegary cold noodles are among the flavors said to have no real counterpart back in China. Much of this is said to trace to postwar food shortages and to repatriates and overseas Chinese who built diners to make a living. The path these dishes took echoes yoshoku, Japan's earlier translation of Western cooking.
