Yoshoku (Japanese Western-style dishes)

洋食

26 varieties

Yoshoku is the family of dishes born from translating Western cooking into Japanese taste and tableware since the Meiji era. Ketchup and demi-glace sauce were worked in to suit rice, breadcrumb coatings made a cutlet easy to eat with chopsticks, and each restaurant and region kept adapting a fork-and-knife plate for a table set with rice and chopsticks. Some forms are said to have started as a cook's staff meal, while others kept being reinterpreted well into the postwar era, as a coffee-shop snack or a delivery-pizza topping. It's said to be much the same story as how Chinese cooking became machi-chuka, the neighborhood Chinese diner.
