35 varieties
Jidori is chicken carrying a defined share of native-breed blood, raised free-range under set conditions for longer than a standard broiler. Some lines, like Hinai-jidori, descend from a natural-monument native breed; others, like Tokyo Shamo and Kawamata Shamo, carry the blood of fighting cocks bred for the ring. Some, like Aizu Jidori, nearly disappeared before being bred back from what remained. This section follows the breed lines and regional brands.
